You should be far more concerned about your anemia and treating it with iron supplementation than you should about how it affects absorption of other foods. The amount of iron in an iron supplement does not affect the absorption of other minerals to an extent that you should worry about it. High doses of iron will affect zinc absorption but it is better to allow this to happen temporarily while you are on iron supplementation than it would be to affect iron supplementation by lowering your iron intake.
